Granola with Mediterranean touches
If you take a look at the ingredients list, you’ll see that this recipe starts with plain old-fashioned oats + a handful of nuts (walnuts and pistachios) and seeds (in this case, sesame and sunflower seeds). But what really sets this apart from your average healthy homemade granola and takes it to the next level of delicious are two very Mediterranean ingredients: extra virgin Plakias Olive Oil and tahini paste.
Not only does extra virgin Plakias Olive Oil and tahini infuse the oats with nutrition and deep, dry flavor, they also lend an extra layer of richness that helps the granola achieve the perfect balance of crunchy and chewy!
For sweetness key elements are honey and dates, which are added as soon as the granola is baked. It is completely optional to add spices to your granola, but a small pinch of cinnamon and cardamom makes all the difference.

In a bowl, toss together the oats, peanuts, walnuts, sunflower seeds, sesame seeds and coconut flakes - Combine wet ingredients + spices
In another bowl, whisk together the honey (heat the honey until it’s runny), tahini, extra virgin Plakias Olive Oil, vanilla extract, brown sugar, cinnamon and cardamom. - Mix the wet and dry ingredients well Pour the wet olive oil and tahini mixture over the dry oat mixture and mix until the oat mixture is well coated

It will take 30 to 45 minutes to bake. Be sure to stir the granola every 7 to 10 minutes or so, so it doesn’t burn, the outer edges should be pushed into the center occasionally - Pull the pan out and set it aside until the granola is completely cool. At this point, you can break it into pieces and mix in the dried fruit of your choice.
Tips for crispy homemade granola with extra virgin Plakias Olive Oil. Making granola with extra virgin Plakias Olive Oil is quite simple, but here are some tips that can make all the difference in texture and taste:
- Use a lower temperature oven. I set mine to 350 degrees F, which will allow the granola to toast nicely without overcooking
- Use a big pan and be sure to spread the oat mixture in a single layer directly on the pan.
- Check the granola every few minutes during baking and stir to prevent burning.
- Remove from the oven when it looks slightly toasted. Remember that the granola will still look somewhat sticky when it comes out of the oven, it won’t be completely dry yet.
- Leave to dry completely. let the granola in the pan to dry. At this point you can add your dried fruit.
And at the end, use a wooden spoon to break it into pieces.
